Chicken Tikka


The word Tikka means bits, pieces or chunks. Chicken Tikka is an easy to cook dish in which chicken chunks are marinated in special spices and then grilled on skewers. This is one of India's most popular dishes. Chicken Tikka can also be made into Chicken Tikka Masala a tasty curry dish, “chicken tikka korma” a sweet curry dish, “chicken tikka chasni” as sweet and sour curry dish and many more curries. Chicken Tikka is a lower fat version of the Asian food, and can be enjoyed with a crisp green salad and onion.
Ingredients:
v  4½ Servings/450g Chicken, Breast, Fillets, Skinless
& Boneless, Raw, Average
v  1 Tsp/2g Ginger, Root, Raw, Pared, Average
v  2 Cloves/6g Garlic, Raw, Average
v  1 Tsp/4g Chilli Powder, Average
v  ¼ Tsp/0.8g Turmeric, Powder
v  1 Tsp/5g Salt, Table, Average
v  1 Large Pot/150g Yoghurt, Natural, Low Fat, Average
v  4 Tbsps./60ml Juice, Lemon, Fresh, Average
v  1 Serving/5g Coriander, Leaves, Fresh, Average
v  1 Tbsp./15ml Oil, Vegetable, Average
Method of Preparation:
v  Grind the chopped coriander (keep some aside for garnishing) and all other marinade ingredients (except yoghurt) to a smooth paste in a food processor.
v  Pour the above mix into a large bowl and add yoghurt. Mix well. Add the chicken pieces and mix well. Cover the bowl and refrigerate. Allow to marinate overnight.
v  Thread the chicken onto skewers and keep ready.
v  Preheat your oven or grill to a medium high temperature (200 C/ 400F/ Gas Mark 6).
v  Place the skewers on the grill racks in your oven with a tray underneath to catch drippings. Roast open till the chicken is browned on all sides and tender.
v  Remove from skewers and put the chicken in a plate.
v  Put the onion rings in a separate bowl and squeeze lime juice over them. Now sprinkle the chaat masala over them and mix well so the onions are fully coated.

v  Garnish and serve the Chicken Tikka with these onion rings and salad.
